Red Potato Salad

Bring a large pot of water to a boil.
Drop in the new potatoes and reduce to low.
Cover and cook for 20 min, or until potatoes are done.
Dice potatoes into a lg bowl (I don't peel them).
Add onion.
Mix all remaining ingredients in sm bowl.
Pour over the potatoes and mix well.
Best if refrigerated for 1-2 hours.



Potato Soup

In saucepan combine potatoes, water, chicken bouillon, celery, carrot, onion, parsley, salt, pepper, dill weed and butter.
Cover and simmer until veggies are tender (about 15-20 minutes).
Add 3 1/2 cups of milk heat until hot.
Blend flour with 1/2 cup milk stirring till smooth, then stir in soup.
Cook, stirring constantly until smooth and bubbly.
Sprinkle bacon bits over the top and serve.








Turkey Chili

Heat a large soup pot on medium heat. Add oil, making sure the pot is not so hot that the oil smokes. Saute the onions and peppers for a minute or two, then add the minced garlic. Soften the garlic but don't let it burn.
Add ground turkey to the pot. Stir frequently to brown the turkey throughout. When the meat is no longer pink, carefully ladle off as much of the fat as possible.



Baked Frito Pie

Pre-heat oven to 350 degrees Heat the canned chili and any optional ingredients on the stove.
Spread a thin layer of Fritos along the bottom of an 8x8 or 9x9 baking dish.
Pour about half of the heated chili evenly over the bottom layer of Fritos.
Completely cover the chili layer with a thicker layer of Fritos.
Sprinkle about half the shredded cheese atop the Fritos.
Pour the remainder of the chili atop the Frito/cheese layer.



Peanut Butter Cookies

Preheat oven to 375 degrees farenheit.
mix together peanut butter, sugars, vanilla and margarine until well blended.
add rest of ingredients, and mix well til totally combined.
form dough into balls about 3/4 inch in size, and place on ungreased cookie sheet, mark top of balls with fork.
heat in 375 degree oven for 8-10 minute.



Pasta Salad

Combine all salad ingredients except parmesan cheese.
In a blender mix all dressing ingredients.
Pour enough dressing to moisten sald to your preference over salad and toss carefully, adding parmesan cheese.
NOTES: This recipe is NOT written in stone, feel free to up amounts or lessen them according to your likes and dislikes.
You should have extra dressing which will not be a problem as the dressing is delicious.
